Good Eats: Donut Dynamite

What do you get when you pair a rainbow-haired baker with classic French pastry technique? Donut Dynamite! Owned and operated by Madame Donut in Wailuku Maui, Donute Dynamite takes the traditional art of baking to a whole new level. The donuts are not boring, nor dry or tasteless, instead they are vibrant, unique and decadent.

Made using brioche bread (which has more egg and butter when compared to traditional bread) the donuts are a combination of outrageous ingredients and complex seasoning. With recipes including Beet Red Velvet, Blueberry Peanut Butter Crunch and Calamansi Ginger Mint, these aren’t your typical supermarket flavors and this isn’t your momma’s donut shop.

The donuts are made everyday with the brioche prep starting the day before. All ingredients are fresh, natural and there are no preservatives either. The texture of the dough is more like bread than cake and it has a light and fluffy buttery texture. The toppings are what really make these donuts shine.

Utilizing local ingredients, these donuts are sometimes off the beaten path and sometimes amazing. But if you’re an adventurous eater and open to new flavors and textures this is the donut place for you. Maui Vanilla Bean and Molokai Sweet Potato are local standouts.

At $4.00 each and $33 for a dozen, these gourmet donuts are not cheap. They are special and made for those who appreciate high quality products and farm fresh ingredients. The artisanal donuts are handcrafted by the shop’s owner and head baker, Madame Donut. A Maui resident who was born in the Philippines, classically trained at the Culinary Institute of America in Napa Valley and featured on the Food Network.

Most of the donuts are sweet, while a few can be bit savory. I wanted something for breakfast and was craving Ham & Cheese. This was bold on flavor and dense. The cheese is sprinkled with a bit of cayenne pepper to give it a little kick while the ham is baked into the center of the brioche. I thoroughly enjoyed this savory and slightly spicy donut although it was pretty rich.

I also wanted to try this beautiful Beet Red Velvet donut. Obviously they use the beets for the vibrant coloring and in the flavor profile as well. This was unusual as the taste was somewhat earthy and slightly sweet but did not convey the traditional red velvet chocolatey flavors. It was delicious but not what I was expecting.

Overall, I have not eaten every donut available, but I am eager to try more. I would also grab those Ham & Cheese donuts in a heartbeat!
