The owner of Tin Roof in Kahului was one of 16 cheftestants (8 Top Chef alumnus and 8 newbies) competing for the official title of Top Chef season 14 in Charleston, South Carolina. One of the many things he can be proud of include the opportunity to cook at the Beard House, a prize he won during the competition. And also the chance to cook side-by-side with his loving wife and business partner Janice on the show. “She came at the perfect time and I really needed that, I loved hearing her voice,” he said.
But the excitement isn’t over for the chef who originally shined at Star Noodle, then opened Migrant at the Wailea Marriott. Simeon has his sights set on expanding and continuing to grow; we can expect to see another Tin Roof open its doors in Hawaii sometime in the future and a brand new restaurant expected in Wailea this year.
“Whatever happens, I seem to have a lot of support out there and I am just blessed that I was able to touch so many people,” he said.
When asked if he would return to Top Chef is they asked him to compete again, Simeon replied that he would prefer to come back as a Sous Chef or in another capacity but not as a cheftestant. He feels it’s time to let others shine and he has committed a lot of time and energy to the show which has also offered him many opportunities to travel and new experiences around the globe.
