What Maui Chefs crave for Thanksgiving

Happy Thanksgiving everyone! While we sit down, enjoy a meal together with our ohana and take a moment to be thankful… I wondered what are Maui’s hottest chefs eating right now? I set out to find the answer. Here’s a look of some of the Valley Isle’s most notable chefs and what they’re craving this, and every, Thanksgiving.

Pumpkin Crunch

“Growing up I loved pumpkin pie, but didn’t always eat the rim part of the crust because I wasn’t into crust. Then I discovered pumpkin crunch and it’s like the heavens parted. I don’t like pie crust so with pumpkin crunch the ratio of pie filling to crust is perfect!” – Chef Lyndon Honda, Laulima Events and Catering.

Sashimi

“For me… It wouldn’t be a holiday celebration without a big tray of sashimi. Sashimi has always been on the holiday table ever since I can remember.” – Chef Kyle Kawakami, Maui Fresh Streatery

Prime Rib Trim

“For me it’s all about the leftovers and the end cuts. The pieces that you get to snack on when you carve the Prime Rib or the Turkey. I snack all day on those pieces by the time it comes to the actual meal I’m already full.” – Chef Sheldon Simeon, Chef & Owner Tin Roof Maui.

Lau Lau

“I crave hot and juicy Lana’i style laulau (pork belly, venison, fish). Can’t beat a “beach to bush” dish that comes from mauka to makai.” Chef Adam Tabura, Hawaii’s Country Chef, Author and Consultant.

Fruit & Nut Stuffing

“So, when we first moved to Maui we were so grateful to be here I made Thanksgiving dinner once a month for years, with everyone’s favorite being my fruit and nut stuffing!!” – Chef Bev Gannon, Hali’imaile General Store and Gannon’s.

Chef Bev Gannon’s Fruit and Nut Stuffing is made with sourdough bread cubes, celery, onions, mushrooms, turkey giblets, dried apricots, plums, cherries, turkey stock, thyme, toasted pecans, toasted walnuts.

“Growing up in an Italian family we really didn’t put much emphasis on Thanksgiving, Christmas and Easter were the two big holidays but my recent favorite has to be my mother in law’s blueberry torte she makes for dessert. I hardly ever eat any turkey or the fixings because after cooking it all day that’s the last thing I want to eat, but I will eat a lot of that torte!” – Chef Mike Lofaro, Chef de Cuisine Humuhumunukunukuapua’a.

Turkey Loco Moco

“Being a local boy, I am guilty of making myself a turkey Loco Moco. Rice, stuffing, turkey, gravy fried egg and cranberry relish on top, all in one bowl. One of my seasonal cravings.” – Chef Gevin Utrillo, Chef de Cuisine Japengo Maui.
