REVIEW: Maui Chef’s Table

Have you ever ate in an industrial kitchen? Literally, in the same room as the chef as he prepares your meal(s)? Well, neither have I! That is until last (last) Friday night! Maui, you are in for a treat! The “Maui Executive Catering” Company has opened their doors for the public to experience a “Chef’s Table” dinner. What is a “Chef’s Table?” According to Wikipedia: It is a table located in the kitchen where one is served a themed tasting menu by the chef. Now that you have a better understanding of what it is, here is the menu of what I ate that Friday night:

Every course was an explosion of taste in my mouth. Nothing I have ever heard of or tasted.

A crowd favorite was the 1st dish. Taro tots, egg sous vide, and beef pancetta. Sous vide is (again, thank you Wikipedia) a method of cooking food sealed in airtight plastic bags in a water bath or in a temperature-controlled steam environment with the intention to cook the item evenly, ensuring that the inside is properly cooked without overcooking the outside, and retain moisture. (See? You learn something new everyday here at MauiWatch!) All I know is, they had me at “taro tots.” Team #TaroEverything in the building.

A lot of their dishes were “farm-to-table” with some of their vegetables coming from local farmers.  I love that!  Support local, all day.  Including their 6th dish, their pork belly was from Malama Farms.  Fresh food from local farms, cooked right in front of me?? I was in food HEAVEN.  Just look at their 2nd dish!

My husband loved their homemade gnocchi.  And yes, you did read that right- Cured Opelu.  Sooo ono.
